Dating back to May 17, 1814, Syttende Mai, or the 17th of May, marks the constitution day of Norway, celebrating the momentous occasion when Norway declared itself an independent kingdom. Pølse are Norwegian hotdogs, often nestled in lompe – a sort of soft, potato flatbread. And the 17. mai kake? It's a cake garnished with red, white and blue - mirroring the Norwegian flag, and packed with lush strawberries, blueberries, and cream.
